I'm a true oatmeal cookie monster... I only counted, as well as January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? Yields: 15 biscuits
The familiar cozy spices and plump blueberries make these even more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --if they last long!
1 wikipedia reference cup (100g) instant oats (fermented if required and measured like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Fold in the raisins.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width by means Healthier Flourless Monster Cookies Ambitious Kitchen of a spatula. Bake at 325°F for about 10-12 minutes.
Notes: It is extremely important to measure both the wheat and oats correctly employing this technique or a kitchen scale. (? That is the one I have and enjoy!) Too much of either would dry from the cookies and render them cakey instead of chewy.
